Certified Hard Red Wheat Berries (grain) makes flour that is considered “classic” whole wheat.
While other varieties of wheat can be made into “whole wheat flour” this is the flour that gives bread a rich brown color and a nutty wheat flavor.
These unique production qualities enable end users to produce fine breads, hard rolls and bagels.
Mixed batch flour is also produced by combining high protein HRW with lower protein market classes to improve loaf volume, dough handling, water absorption and other mixing characteristics.

 

Hard Red Wheat is a very versatile grain that is used primarily as a whole grain or processed whole wheat flour.
